The bright lemon flavor is a perfect accompaniment for sweet fruit, especially in spring.

Ingredients

  • Lemon curd – lemon curd is simply a mixture of egg yolks, sugar and lemon juice and zest. There are all sorts of different curd recipes like the cranberry curd used in this No Bake Cranberry Cream Pie. Lemon curd is really not difficult to make at home and if you have a lemon curd recipe you can substitute homemade in this lemon curd dessert. Or use store bought lemon curd instead. Or you can purchase jarred lemon curd at grocery stores nationwide. There are all sorts of uses for and recipes using lemon curd so once you buy it you’ll have no problems figuring out what to do with lemon curd.
  • Mascarpone – sometimes mispronounced marscarpone cheese, mascarpone cheese is a creamy cheese similar to american cream cheese but it’s high butterfat content makes it much more decadent, luscious and velvety than cream cheese. Cream cheese may be substituted for mascarpone for cost or convenience purposes though.
  • Lemon juice – fresh squeezed lemon juice adds not only an extra fresh pop of brightness to this cheesecake dip it also loosens the mascarpone to make it extra smooth and dippable.
  • Confectioners sugar – optional, to taste. Lemon curd is very sweet but the mascarpone cheese is not sweet. After whipping ingredients taste and sweeten with confectioners sugar if desired.
