Inspector Notes: Observed raw bacon being stored on the counter in the dish area with a temperature of 68F. Employees were unsure of how long the bacon was sitting there. Observed blue cheese crumbles and tomatoes on the prep line to be above 41F. Observed a build-up of oil residue on the edge of the vent hood above the fryers.

Inspector Notes: Observed ranch, Caesar dressings and shredded cheese that require refrigeration to be stored on counter in main dining room without proper cold holding. Observed cheese cake in café held in reach-in cooler not capable of holding temperatures of 41F or below. Observed cream cheese, milk, ranch and Caesar dressings in café held in reach-in cooler not capable of maintaining temperatures of 41F or below.Observed no outward protecting sneeze guards on any self-serve area. Observed apples served for self-service without any wrapping or protection. Observed dressings stored on a three-tiered display with no proper protection from overhead contamination. self-service salad bar to be on an open table with no sneeze guards, overhead protection or lids for food. Observed soup within main dining area to be held with no lid or protection from overhead contamination. Observed to go boxes stored on floor behind front service counter.

Inspector Notes: Observed multiple food items stored uncovered throughout the facility: hamburgers in reach-in freezer, pooled eggs in reach-in cooler, chicken tenders, mozz sticks, hamburgers and cheddar bites in reach-in cooler.Observed multiple sauce bottles in prep top cooler without a label.Observed build-up around door handles of walk-in cooler/freezer. Observed old food debris on side of fryer.Observed old food debris and build-up on walls behind shake station and fryer.

Inspector Notes: Observed hand sink non-operational in main kitchen. Observed no soap at bar hand sink. Observed 3 reach ins out of temp. Unable to stay in temp through usage.Observed multiple food items (potatoes, grease, tubs) on floor through main kitchen.Observed food debris on floors, appliances surface (oven, reach ins, prep tops). Observed grease build up on hood system. Observed various pans, buckets, and etc stored throughout main kitchen that needs to be tidied up.

Inspector Notes: Observed employees to be switching between tasks (washing dishes and then cooking shrimp and crab cakes), changing gloves but not washing hands.Observed build up on the interior of the ice machine and the baffle.Observed none of the cold holding units to have internal thermometers. Observed build up on the interior of the reach in cooler units. Observed build up within the gaskets of the cold holding units.Observed grease splatter on appliances (stove, bottom and back grill) under the ventilation hood.
