Observed blue cheese crumbles and tomatoes on the prep line to be above 41F. Observed a build-up of oil residue on the edge of the vent hood above the fryers.

Observed dressings stored on a three-tiered display with no proper protection from overhead contamination. self-service salad bar to be on an open table with no sneeze guards, overhead protection or lids for food. Observed soup within main dining area to be held with no lid or protection from overhead contamination. Observed to go boxes stored on floor behind front service counter.

Observed grease build up on hood system. Observed various pans, buckets, and etc stored throughout main kitchen that needs to be tidied up.

Inspector Notes: Observed employees to be switching between tasks (washing dishes and then cooking shrimp and crab cakes), changing gloves but not washing hands.Observed build up on the interior of the ice machine and the baffle.Observed none of the cold holding units to have internal thermometers. Observed build up on the interior of the reach in cooler units. Observed build up within the gaskets of the cold holding units.Observed grease splatter on appliances (stove, bottom and back grill) under the ventilation hood.
